If you’re needing a quick meal to make after a long day then this recipe is for you! It’s a light dinner meal you can make in 15 minutes which is high in fibre from all the vegetables, high in healthy fats and high in protein.

Heat two fry pans over medium heat, add 1 tbsp of olive oil to each pan.
Break off cauliflower florets, add into a food processor and process until it turns into a rice-like consistency.
Add cauliflower rice and sliced spring onions into one of the fry pans. Add garlic powder, salt and pepper, mix together and saute for 3-4 minutes. Add in spinach and saute for another 1 minute.
Meanwhile, add the prawns, paprika and chili flakes into the other fry pan and cook for 2-3 minutes until cooked through.
Serve prawns over cauliflower rice with ½ sliced avocado.

This is delicious!!! I’m not a super spicy eater but the avo seems to even it out. I would recommend everyone tries this yummy recipe. Super quick and easy to make
