This teriyaki salmon one pan meal is simply delicious, and of course super nutritious! I’m a huge fan of one pan meals, they are a huge kitchen time saver! I like to line baking trays with baking paper for easy clean-up, completely optional. This is the perfect simple, but healthy meal to make when you’re short on time (you seriously only need 10 minutes prep time). It’s also great to make during meal prep in the weekend to enjoy for lunches the following days.

Ingredients:

 2 salmon fillets (150g-200g)
 1 head of broccoli, chopped into florets
 2 carrots, sliced into circles
 1 bag of green beans (around 300g)
 2 tbsp sesame seeds
 2 tbsp olive oil
 Sea salt and pepper to taste
Teriyaki Sauce
 3 tbsp tamari
 1 tbsp olive oil
 1 tbsp dijon mustard
 1 tsp honey
 1 tsp ginger, grated/crushed

Method:

Preheat the oven to 180°C. Line a baking tray with baking paper.

Arrange the broccoli, carrot, green beans on the baking tray.

Drizzle olive oil over vegetables and season with salt and pepper.

Place the tray of veggies in the oven for 15 minutes.

Mix all sauce ingredients together in a small bowl, whisk until combined.

Take veggies out of oven and nestle the salmon fillets in the middle of the tray. Spoon the sauce mixture over each fillet. Add tray to oven for 12-15 minutes.

Enjoy as is, or serve with brown rice, if desired.
