I know you might think berry and omelette or sweet omelette don’t go in the same sentence, but trust me it’s absolutely delicious!! I challenge you to give it a try! This berry omelette is also dairy, gluten, grain and refined sugar-free. It can be whipped up in under 10 minutes which is another bonus!

Ingredients:

 2 eggs
 ½ tsp cinnamon
 1 tbsp phyllium husk
 ¼ cup coconut milk or unsweetened almond milk
 1 servings of vanilla protein powderuse code NBRADY for 15% off
 1 tsp coconut oil
 1/2 - 1 cup berries
 optional toppings: tahini, almond or peanut butter, banana, ground flaxseeds, chopped nuts

Method:

Whisk all ingredients in a bowl except for the berries until well combined. Stir berries through.

Heat coconut oil in a large frypan over medium heat.

Melt coconut oil in a medium size fry pan, pour in the mixture and allow to cook for 1-2 minutes. Once the edges begin to look cooked, flip it. Cook through for a further 1-2 minutes.

Plate it up. Top with your desired toppings - tahini/peanut/almond butter, chopped banana, ground flaxseeds. Fold the omelette over and enjoy!
