A healthy, light and fresh salad which can be whipped up in no time! This delicious prawn salad is filled with healthy fats, protein, greens vegetables and lots of fibre, all the beautiful nutrients our body needs to thrive and feel nourished!

Ingredients:

 300-350g of prawns
 1 tsp coconut oil
 3 handfuls of rocket
 3 courgettes, thinly sliced or spiraled.
 ½ punnet of cherry tomatoes, cut in half
 1 large avocado, diced
 juice from 1 lemon
 2 tbsp olive oil
 1 tsp wholegrain mustard
 salt/pepper to taste

Method:

Melt coconut oil in a frying pan over medium heat. Add prawns and stir-fry for 4-5 minutes until prawns are pinked and cooked through.

Add lemon juice, olive oil and mustard into a small jar, pop on the lid and shake together.

In a large bowl add the rocket, spiralized courgettes, chopped tomatoes, avocado and drizzle the dressing on top. Toss ingredients together.

Add the salad onto two plates, top with prawns, sprinkle with salt and pepper and enjoy!
