Ahh spaghetti bolognese, traditional and beloved comfort food to many. Who’s to say you can’t enjoy this delicious meal when being a health-conscious foodie? This simple and super yummy meal is perfect for anyone wanting a healthy, quick and nourishing meal. The resulting taste and texture are just as satisfying while not compromising your health.

Using thinly sliced zucchini is the most fabulous way to increase vegetables into yours and your children's diet. They are of course gluten free, wheat free, fresh and incredibly nutritious. If you have a spiralizer, use that instead of a julienne peeler. If you don’t happen to have either you could use a regular peeler and slice the zucchini lengthways.

Ingredients:

 500 g beef mince
 1 small brown onion, chopped
 4 garlic cloves, finely chopped
 400 g can of chopped tomatoes
 2 tsp dried oregano
 1 tsp chilli flakes
 4 tbsp fresh parsley, roughly chopped
 6 courgettes, spiralized or thinly sliced using peeler
 2 tbsp olive oil
 sea salt/pepper to taste
 optional extras: 1 carrot finely diced, 1 capsicum finely diced, 2 handfuls of spinach

Method:

Heat oil in a large fry pan over medium heat. Add the onions, garlic, carrots, and capsicum if using, then cook these for 4-5 minutes until softened.

Next, add the mince and brown for another 5-7 minutes, break up the meat into smaller pieces using a wooden spoon. Stir in oregano and chili flakes and mix together.

Add tomato can, salt, pepper and cook for another 2-3 minutes. If using spinach toss this through now.

To make the zucchini noodles, use spiralizer machine or a julienne peeler and slice the zucchini lengthways. You can either eat them raw or cook them slightly. To cook heat a medium size fry pan over medium heat, add oil. Add zucchini to the pan, and lightly fry stirring occasionally for 3-5 minutes until tender.

Place zucchini on serving plates in a round circle with a hole in the middle, spoon the bolognese into the middle and sprinkle with chopped parsley. Serve immediately and enjoy!
