This simple chicken tortilla wrap recipe is great for when you want a quick, healthy lunch or dinner option. It's filled with non-starchy vegetables to give you a boost of gut-supporting fibre, protein to support blood sugar balance and healthy fats to elongate your blood sugar levels which helps to keep you satiated and calm.

Ingredients:

 250g - 300g shredded chicken
 2 cups rocket
 2 cups grated carrot
 ½ cucumber, cut lengthways
 1 avocado, sliced
 4 tortilla wraps
 Himalayan salt and pepper
 Pinch chilli flakes for each wrap

Method:

Fill warmed or cold tortilla wraps with rocket, grated carrot, sliced cucumber, avocado, chicken, salt and pepper and a pinch of chilli flakes.
