If you're after a clean eating "burger", then this paleo sweet potato hash burger is for you! These burgers are delicious and nutritious, and it's a fun way to jazz up the traditional burger. Have some fun with this recipe, play around with ingredients you put between the sweet potato hash cakes.

Ingredients:

 2 cups grated sweet potato, water squeezed out
 2 eggs
 ½ tsp paprika
 ½ tsp turmeric
 2 garlic cloves
 salt/pepper to taste
 coconut oil, for frying
For the middle
 1 tomato, sliced
 ½ large avocado, sliced
 2 chicken breasts or thighs, thinly sliced
 ¼ onion, finely chopped
 2 handfuls of spinach or rocket leaves
 few slices of cheese (optional)
 coconut oil for frying

Method:

Grate the sweet potato and squeeze out any excess juice from the grated sweet potato. Place into a bowl (pat dry with a paper towel if needed). Add the eggs, garlic, spices, salt, and pepper and mix well.

In a frying pan on a medium heat melt some coconut oil. Use a 1/4 cup to scoop out the batter, carefully form into a fritter with your hands and place into the frying pan.

Cook for 4-5 minutes on each side until both sides are golden and the hash is cooked through.

In a separate frying pan, on medium heat melt some coconut oil. Add sliced chicken breasts to the pan, and cook for 5-7 minutes until chicken is cooked through. Season with salt and pepper.

Slice all remaining ingredients that are going in the middle of the burger.

To assemble the burger add 1 sweet potato hash to a plate, then spinach/lettuce, chicken, avocado, tomato, onion, cheese and top with 1 sweet potato hash.

Serve alongside a fresh garden salad and enjoy!
