This is a great dinner recipe to make that's light, easy to make and loaded with protein, fat and fibre to support stable blood sugar levels. It's low carb and paleo friendly. It's also extremely nutritious as it contains liver which is a superfood. Liver is high in iron, choline, B vitamins, and vitamin A.

Ingredients:

 500g grass fed beef mince
 400-500g organic chicken liver
 1 onion, peeled and roughly chopped
 3 garlic cloves, peeled and chopped in half
 1 tsp of each, dried parsley and thyme
 1 avocado, sliced into quarters
  3-4 tomatoes, sliced
  8 cos lettuce leaves

Method:

In a food processor add the mince, liver, onion, garlic, dried herbs and process until well combined. Roll into 8 patties. Heat a fry pan with olive oil or coconut oil and cook for 3-5 minutes each side.

For the parsnip fries. Pre-heat oven to 180 degrees Celsius. Line a baking tray with baking paper. Add sliced parsnip fries, drizzle with olive oil, sea salt and pepper. Bake in the oven 30-35 minutes.

Slice up avocado and the tomato, put this onto a plate with 2 cos lettuce leaves. Top the lettuce with 1 or 2 patties and add the fries on the side. (you can freeze left over patties for a later date or use the following day for lunch).

This goes well with hot sauce if you're a hot sauce fan.
