This summer peach, walnut, feta and avocado salad is bursting with goodness. It’s a simple salad that can be made in under 10 minutes and is full of healthy fats. Healthy fats are important to reduce inflammation, support cellular health, keep up satiated between meals and give our skin a healthy glow.
Serves 4-5 as a side dish
5 cups of spinach
1 small red onion, thinly sliced
1 large avocado, diced
4 peaches, sliced
1/2 cup walnuts, roughly chopped
1/2 cup goats feta
Salt and pepper to taste
For the dressing:
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tsp dijon mustard
Add all dressing ingredients together into a small bowl and whisk together until combined.
Add the walnuts into a small fry pan and toast for 3-5 minutes until they go a little brown and crunchy.
In a large mixing bowl add the spinach and onion. Pour 3/4 the dressing on top of the spinach and toss together until well combined.
On a large serving plate add the spinach mixture and top with the diced avocado, peach slices, toasted walnuts and then crumble the goats feta on top. Drizzle the remaining dressing over the salad.
Serve alongside your choice of protein.
