A healthy, light and fresh salad which can be whipped up in no time! This delicious prawn salad is filled with healthy fats, protein, greens vegetables and lots of fibre, all the beautiful nutrients our body needs to thrive and feel nourished!
1 tbsp coconut oil
3 handfuls rocket
3 courgettes, thinly sliced using a julienne peeler or spiralizer
½ punnet tomatoes, sliced in half
1 large avocado, sliced into cubes
Juice from 1 lemon
2 tbsp olive oil
1 tsp wholegrain mustard
Salt and pepper to taste
Melt coconut oil in a fry pan over medium heat. Add prawns and stir-fry for 4-5 minutes until prawns are pinked and cooked through.
Add lemon juice, olive oil and mustard into a small jar, pop on the lid and shake together.
In a large bowl add rocket, spiralized courgettes, chopped tomatoes, avocado and drizzled the dressing on top. Toss ingredients together.
Add the salad onto two plates, top with prawns, sprinkle with salt and pepper and enjoy!
