It doesn't get much simpler than this! You don't need any fancy ingredients, just two staple house hold ingredients, a fry-pan and you're good to go! This pancake is super light and is perfect for a light breakfast (especially kid's breakfasts), you could also pack it in their lunch box, it's also great as a snack (I actually just made this for a snack which I'm enjoying as I type, I thought... how have how I not shared this recipe with you guys yet, so I'm getting onto it right away!).
So, here you go, a simple recipe that doesn't requite a lot of time or dishes and is healthy! Enjoy!!
1 pinch cinnamon
1/2 tsp vanilla essence
An extra egg if you want to boost protein intake or make it a bigger meal
1. Heat a large fry pan with 1 tsp coconut oil. Mash the banana with a fork until it forms a paste. Crack the egg into the banana and mix together until well combined, (I added a pinch of cinnamon - because I'm obsessed with cinnamon and it was delicious!).
2. Add 2 tablespoons of batter at a time to the fry-pan. Cook for 1-2 minutes until golden brown and flip, then cook for another minute.
3. Top with desired toppings: additional banana, greek or coconut yoghurt, pinch of cinnamon, pure maple syrup.
